Weekly Recipe: Veggie Pizza

Veggie Pizza
Pizza Dough

  • 2-3/4 cups all purpose flour
  • 1 Tbsp. active dry yeast
  • 1 tsp. garlic powder
  • 1 tsp. dried oregano
  • 1/2 Tbsp. vegetable oil
  • 1 cup water
  • 2 Tbsp. olive oil
Toppings
  • 1 tomato (diced)
  • 1 zucchini (diced)
  • 1/4 cup shredded Parmesan cheese
  1. In a large bowl stir together the flour, yeast, garlic powder, oregano and basil.  Mix in the vegetable oil and water.
  2. When dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic.
  3. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil.  Cover with a damp cloth and let rise in a warm area for 20 mins.
  4. Preheat oven to 375 degrees.  Punch dough down.  Divide dough into 8 equal parts and form into balls.  Flatten dough with fingers into a circle to form the pizza crust. 
  5. Place on a greased baking dish.  Brush the tops of the pizza with olive oil.  Top each pizza with tomato and zucchini and sprinkle with Parmesan cheese.
  6. Bake for 15 to 25 mins. or until golden brown, rotate halfway through. 
  7. Allow to cool, then serve to your favorite pup!
  8. Store the remaining pizzas in the refrigerator for a week.  You can freeze them for up to six months.

I read the recipe three times, I couldn't believe my eyes! For us? For furry friends? Pizza? I'm going to ask M to add a bit of chicken at the top, or would that be pushing my luck. Thanks for sharing your scumdeleomptious pizza recipe :)
